Frosted Nuts

1/2 cup sour cream
1 1/2 cups Isomalt or DiabetiSweet
1 tsp. vanilla
1 lb. nuts (I've used walnuts and pecans, both are delicious)

Boil sour cream and Isomalt for 5 minutes, stirring occasionally. Remove from heat and stir in vanilla. Add nuts and stir till mixture becomes "sugary". Pour out onto waxed paper and use forks to separate. Let stand until dry. Store in airtight container.

Caution: Overconsumption may cause a laxative effect!
